Heat oil over medium heat then add onions. Fry until golden brown and fragrant
Add the ginger paste & garlic powder, stir and let it cook for a minute then add the spices & salt
Let the spices cook for 2 minutes while stirring. Then add tomato paste & stir
Pour the diced tomatoes, mix and let it cook while covered for 5 minutes until it cooks down to a thick paste and add the Royco cubes
Add the boiled njahi and mix well then pour in the coconut milk and mix
Add 2 cups of water and stir well
Bring the mixture to a boil then cover and cook on low heat for 20 minutes
Finish with freshly chopped coriander leaves
