Coconut Njahi

Ingredients

  • 2 cups black beans boiled
  • 2 medium-sized red onion
  • 1 green capsicum
  • 1 teaspoon ginger paste
  • 1 teaspoon Royco garlic powder
  • 2 Royco beef cubes
  • 2 tomatoes diced
  • 1 tablespoon tomato paste
  • 1 teaspoon Royco curry powder
  • 1 teaspoon cumin powder
  • 1/2 tsp Royco Tumeric Powder
  • 3/4 cup coconut milk
  • 1 bunch fresh cilantro
  • salt

Get cooking

  1. Heat oil over medium heat then add onions. Fry until golden brown and fragrant

  2. Add the ginger paste & garlic powder, stir and let it cook for a minute then add the spices & salt

  3. Let the spices cook for 2 minutes while stirring. Then add tomato paste & stir

  4. Pour the diced tomatoes, mix and let it cook while covered for 5 minutes until it cooks down to a thick paste and add the Royco cubes

  5. Add the boiled njahi and mix well then pour in the coconut milk and mix

  6. Add 2 cups of water and stir well

  7. Bring the mixture to a boil then cover and cook on low heat for 20 minutes

  8. Finish with freshly chopped coriander leaves
