Heat oil over medium heat and add the onions. Fry until golden brown and fragrant.
Add the chopped coriander stems and mix well.
Add the Royco ginger & garlic spices, stir and let it cook for a minute then add the spices & salt.
Let the spices cook for 2 minutes while stirring.
Add tomato paste & diced tomatoes. Mix and let it cook while covered for 5 minutes until broken down to a thick paste.
Add the boiled lentils and mix well then pour in the coconut milk mix and let it simmer then add the coconut cream. Add 2 cups of water and mix well.
