Lentil Curry 

Lentil curry

Ingredients

  • 2 cups boiled lentils
  • 2 medium red onion
  • 1 tablespoon royco ginger spice
  • 1 tablespoon royco garlic spice
  • 2 tablespoon cooking oil
  • 2 tomatoes diced
  • 1/2 teaspoon salt
  • 1 teaspoon tomato paste
  • 1 teaspoon royco curry powder
  • 1/2 teaspoon royco turmeric powder
  • 3/4 cup coconut milk
  • 1 tablespoon coconut cream
  • 1 bunch coriander leaves
  • coriander stems

Get cooking

  1. Heat oil over medium heat and add the onions. Fry until golden brown and fragrant.

  2. Add the chopped coriander stems and mix well.

  3. Add the Royco ginger & garlic spices, stir and let it cook for a minute then add the spices & salt.

  4. Let the spices cook for 2 minutes while stirring.

  5. Add tomato paste & diced tomatoes. Mix and let it cook while covered for 5 minutes until broken down to a thick paste.

  6. Add the boiled lentils and mix well then pour in the coconut milk mix and let it simmer then add the coconut cream. Add 2 cups of water and mix well.
