Matumbo

Ingredients

  • 1/2 kg beef tripe sliced
  • 4 tomatoes chopped
  • 1 tbsp Royco Tomato, Ginger and Garlic Mix
  • 1 onion diced
  • salt
  • fresh cilantro

Get cooking

  1. In a pot fry the onions until soft or golden brown.

  2. Add your tomatoes and a pinch of salt, let this simmer for about 5 minutes until they are well cooked

  3. Add your boiled matumbo and mix it in.

  4. Dissolve Tomato Ginger and Garlic in water and stir well, add to the matumbo and let them simmer. The Ginger and Garlic in TGG Mix will mask the smell of matumbo.

  5. Add 1/4 cup of water and cover this with a lid and let it simmer.

  6. Add your finely chopped cilantro and mix it and serve while hot.
